Cauliflower Mac and Cheese
- 1 head Cauliflower
- 1 ea. potato
- 2 ea. carrot
- 1/2 tsp. onion
- 1/2 tsp. garlic
- 1/4 c. coconut oil
- 1/2 c. non-dairy milk
- 1/4 c. nutritional yeast
- 1 tsp. salt
- 2 slices vegan bread
- Preheat oven to 400 F
- Chop cauliflower into 1/2 inch cubes. Bake in the oven on a sheet tray for 15 minutes.
- Peel and dice carrots and potatoes. Boil in a pot of water until tender.
- Using a high-powered blender add remaining ingredients along with the carrots and potatoes drained. Blend until smooth
- Fold cheese sauce into the cauliflower.
- Toast two slices of vegan bread. Crumble toast until bread crumbs form. Top the bread crumbs on the "pasta".
- Bake for 10 minutes
